Breakfast has to be one of my least favorite meals. I don't find my appetite quite awake before noon, so I love breakfast recipes that can be easily taken for a later snack once my hunger should appear. Here is my easy recipe for Banana Oat & Honey Scones with a sweet honey glaze.
What You'll Need:
2 1/2 Cups Jiffy Baking Mix
2/3 Cup Milk
1/2 Cup Rolled Oats
1/4 Cup of Granulated Sugar
3 Tbs Honey
1 Banana cut into small bits
Preheat oven to 400°
Combine baking mix, milk, honey, and sugar into a large bowl. Mix well.
Next pour in your oats and mix them into your dough.
Once mix thoroughly fold in your banana bits and knead them into the dough.
Coat a baking sheet with a non-stick spray.
Place 1/4 cups of dough onto pan. You will not need much space in between your scones as they do not spread much during the baking process.
Bake scones for 10-15 minutes until tops are golden brown.
Sweet Honey Glaze Option:
Combine 1 tbs of honey and 2 tbs of milk into a small, microwave safe, mixing bowl.
Heat for 10 seconds in the microwave then remove.
Take 1/4 cup of powdered sugar and begin slowly adding it to your liquid mixture until glaze reaches your desired consistency.
Drizzle over scones.
