I am happy to report that I am officially out of pumpkin mix just in time for Thanksgiving. (If you were starting to think "dang, enough with the pumpkin treats!" haha) Since we didn't celebrate my birthday until yesterday I spent the actual day enjoying some down time and baking. Here is a little treat I concocted use the last bit of pumpkin in our pantry.
What you will need:
Brownie Mix (Prepared or store bought)
Pumpkin Pie Mix
Your Favorite Frosting
Start by preparing your favorite brownies as normal but add in a small can of pumpkin mix
Cook as directed by your brownie recipe
Once cooked and cooled empty your brownies into a large mixing bowl
Add frosting to the brownies (you should only require about an 1/8 cup) mixing well by hand. You will know there is enough frosting when brownies stick together and are moldable
Taking a tablespoon at a time, scoop the brownie mixture into your hands and roll into two inch balls
Insert lollipop sticks
Place in freezer for about ten minutes
You may then decorate the pops using the remaining frosting or melted chocolate. I prefer to use the frosting as it's less fuss. If you choose to use frosting, for decoration, may I recommend heating it ever so slightly. You will then be able to dip your pops just as you would with chocolate. Be careful not to overheat the frosting as you will find it does not coat as thickly. 5-10 seconds in the microwave is just plenty.
