Mini Pumpkin Pie Pop Tarts

During the beginning of this week I have been working on a project with a publication team to share some of my simple festive treats with their readers.  I am super excited to get the opportunity to not only work with such a lovely magazine but be able to physically see something I've created in print.  I will keep you all posted on the project, but for now I wanted to share a little peek at what I have been creating.

Here is just a sample of what will be featured in the magazine... Mini Pumpkin Pie Pop Tarts!

This is the simplest recipe!  All you need is:

Pie Crust
Pumpkin Pie Mix
Cream Cheese Frosting

What you'll do:

Pre-heat over to 375ยบ
Spray a baking sheet with non stick and set aside
Roll out your pie crust and cut 2" squares, as many as you can
Place half of squares onto sheet
Place a small spoonful of pumpkin pie mix into center
Cover with another pie crust square and with a fork press all edges closed, sealing in pie mix
Take a egg and blend it well
Brush a thin coat of the egg onto the top of pop tarts
Bake 15-20 minutes until tops are golden brown
Remove and allow time to cool

Once cooled you can decorate your pop tarts however you like.  This is a fun way for family of all ages to get involved so that you can serve a whole variety of festive little treats!

  2. These mini-pumpkin pie pop tarts might be the best things I've ever seen lately! Pumpkin anything is perfect for the fall weather. I'll be trying these out for myself. Yum! :)


  3. We just made these and I bought pastry puff sheets instead of pie crust. (I couldn't find a flat pie crust at the store, and I was trying to make it easy.)

    So, they are super yum, but not half as pretty as yours.

    Next time, I'll have to make the pie crust myself...

    1. The best place to find the pie crusts I used is next to where they keep the biscuits. It comes in a box and you just roll them out flat. Also, a good tip for decorating (sorry I didn't think to include this) is to slightly heat the frosting and place into a ziplock baggy. Cut a small hole into the corner and draw it on. The lightly heated frosting will spread much easier! Be careful not to heat too much though or it will melt the baggy! haha Glad you found them so yummy! xo
